The Story About “Fish Sauce” (Part 6)

Some people understand that the ancient people that used fish sauce would be only fishermen who lived close to the sea. In fact, central people are using fish sauce earlier than other sectors. But before that fish sauce are made from Cyprinidae called “Nam Plah Plah Soy (fish sauce from Cyprinidae fish)”. Which ancient people said taste good and more delicious than fish sauce made from sea fish. These days you really can’t get it anyway because it is quite difficult to catch Cyprinidae due to the amount of Cyprinidae is decreased. The remaining fish sauce factories that made their fish sauce from Cyprinidae are only 2 places left, one is at Nakhon Sawan and another is located in Phichit. So recently people started to use fish sauce made from Stolephorus and Clupeoidie more often. Even though the taste is a little bit different, this allowed them to have fish sauce without any shortage. Because some Thai food like Tom Yum or Som Tum if missing fish sauce would not be as tasty and really won’t have the same taste. Fish sauce production in the industry is increasing because people are used to having fish sauce and when they don’t have it then they will feel like there is something missing. It is not easy to do it yourself as it was before, because of the lack of fish, and to buy an already-made fish sauce is one of the alternatives. Which why fish sauce consumption is increasing rapidly.

Consumer demand for fish sauce is not only limited to domestic needs. Also many Thai’s and Asians abroad can not give up fish sauce because they are used to having fish sauce since immemorial times. Those who live abroad for a long time will often talk about missing Thai food. And if one day you wish to make Thai food yourself the one thing that really can’t miss is fish sauce. So some people will even pack fish sauce in their luggage in the past. Now it’s not necessary anymore because Thai fish sauce is sold in other countries too whether the United States, Netherlands, Japan, Korea, Hong Kong, etc. All countries have Thai fish sauce for consumers needs all over.

Thai fish sauce dominate the global market

Currently they try to control the quality of fish sauce being produced more. That’s because some people use their knowledge in the wrong way, such as using water color or boiled bone water mixed with salt. Then they try to fool people and sell it as fish sauce. And that is considered taking advantage of the consumers. So they have to come up with an idea for controlling protein and other properties like nutritional and health quality of fish sauce. So people will have good quality fish sauce and proper pricing and most importantly they will not be taken advantage of. These changes are necessary since producing fish sauce in just general household got developed to industrial field. Now they can control the quality closely, and make certain it is healthy and the quality is trustable. Then fish sauce can be exported, either to close neighboring countries and even far away like the Middle East countries as well as Europe and America.

The popularity of Thai fish sauce in internal and external markets has contributed to fish sauce consumption to grow. And that allows the operators in the fish sauce industry to compete and become more efficient. Especially in the past ten years where they have imported the manufacturing technology, improved the product quality and improved the packaging of fish sauce. One change has been putting fish sauce into small envelopes which is very convenient for people to use. Nonetheless they still have efforts to improve fish sauce continuously. And that means satisfying the variety of consumer groups because using fish sauce is easier than ever. For example, Pichai’s fish sauce manufactory (fish sauce manufacturer brand oyster) turns itself to produce fish sauce in the small envelopes. And these are easy to carry and convenient to use any time needed like when traveling. So, some airlines turn to use fish sauce in the package like that also. Today, Thai fish sauce exports have become a standard recognized around the world. There is also a favorite flavor of for every fish sauce user. Even the original countries like Vietnam and the Philippines still buy fish sauce from Thailand.

Now, Thailand is known as the country that exports more fish sauce and fish products than any other country in the world. This is in part because of the fishing industry boom since 1987, combined with the government policy that tries to promote the industries for exports. And that makes the private industry, especially food products grow more. That makes Thai products have the ability to develop and succeed in the global market arena. This not only brings revenue into the country it is also the pride of Thai people.

    Golf, a very interesting article. My Thai partners family come from Samut Sakhon which as I am sure you know is a big player in the fishing industry.

    I believe they make fish sauce there, but I guess this is from “sea fish?”

    Now if I understand you article correctly then you are saying that freshwater fish are used?

    Has the industry changed i.e. moved to different sources of fish?

    Thank you for your comment. And yes, now mostly the fish sauce industry in Thailand really is moving forward to try and produce the product for the fish sauce consumers, which happen to be all over the world. That and another reason is the freshwater fish are not enough to catch and to make the fish sauce in the large industry anymore so now they try to figure out what can be used to make fish sauce instead of using only freshwater fish or even fish only.
    Now as you can see, we will have fish sauce made from sea fish, squid, Vermetidae, etc. Of course the freshwater fish still remain to be one of the ingredients to make fish sauce in some towns or some small villages, but only just for produce and sell in the small market or just to be used in the household only.
