Pad See Ew (fried noodles) is the food that is sold everywhere in Thailand. And it is often found on nearly every restaurant menu. In most cases, any restaurant that is selling Rad Nar (fried noodles with gravy) will also be selling Pad See Ew (fried noodles) too. The style of cooking Pad See Ew (fried noodles) is similar to Guay Tieow Kua (stir fried noodles), but Pad See Ew (fried noodles) will add the sweet black soy sauce into it. And also uses Chinese kale as one of the cooking ingredients. Mostly the noodles used are large strip rice noodles and white rice vermicelli. It’s not popular to use small strip noodles and Chinese vermicelli. Vegetables that are popular to use will be Chinese kale only. Meat that is popular to be used as a component are chicken and pork, but not squid. Generally it is made by adding egg, seasoning with black soy sauce, sugar, fish sauce, then pan frying in the high heat. The taste of Pad See Ew (fried noodles) generally will be sweet. How to do and the ingredients of Pad See Ew (fried noodles) will be as follows.
Ingredients
- 300 grams (10 ounces) large strip rice noodles (or if do not have, then use the white rice vermicelli instead)
- 300 grams (10 ounces) pork, cut into thin pieces and bite-sized (or can use chicken meat instead)
- 6-7 Chinese kale (add more or less, depends on your preference)
- 2 eggs
- 3 large garlic cloves, peeled and coarsely chopped
- 3 Tbsp oyster sauce
- 1 Tbsp soy sauce
- 1 tsp seasoning sauce
- 2 tsp black soy sauce
- 1 Tbsp sugar
- 3 Tbsp vegetable oil for stir-fry
Ingredients for marinating the pork
- 1 egg
- 1 tsp sugar
- 2 tsp soy sauce
- 1 tsp corn flour
- ½ tsp pepper
How to do…
1. Mix the prepared cut pork with eggs, sugar, soy sauce, pepper and corn flour. Mix well together. Then leave it to marinate in the refrigerator about 30 minutes (or longer) for the tender pork.
2. Separate the large strip rice noodles. Then add black soy sauce to mix with the noodles before cooking. This will make the noodles get black color from the black soy sauce thoroughly, the noodles will not stick together, and will make it fry easier and faster. If you like you can use the white rice vermicelli to make. You need to soak the white rice vermicelli in water for about 10 minutes first and then drain the water out. And toss with black soy sauce thoroughly.

3. Rinse the Chinese kale with water thoroughly. Take the old and yellow leaves out. Separate the stem and the leaves from each other. Peel the shell from the hard stem, then slice oblique wise into thin pieces. For the leaves, cut into bite-sized pieces.

4. Turn the stove on medium heat. Place the pan and add oil into it. Wait until the oil is hot, add garlic to fry until the garlic turns golden and fragrant. Then add the marinated pork to fry. Fry until the pork is done, then start to add the seasoning ingredients like oyster sauce, soy sauce, seasoning sauce and sugar into it.

5. Fry until all ingredients until mixed well together. Then make a hole in the middle of the food in the pan. Break the eggs into the hole, and stir to spread. Wait until the eggs are cooked, then flip the pork to cover the eggs. Wait a few second, flip the eggs back over, and then add the noodles into it. Follow with the Chinese kale stem. Stir them up.

7. Finally, add the kale leaves into the pan. Fry until the vegetables are cooked and all ingredients are mixed well together. Turn off the heat and lift the pan down.
8. Scoop Pad See Ew (fried noodles) onto the plate and serve. Season with pickled chili sauce, chili powder, or fish sauce as you like.
